FWIW, it depends on the brand of parchment paper. The Reynolds brand is my favorite, and I can usually get 3-4 trays of non-chocolate chip cookies on a sheet without a problem. Chocolate chip, I flip the sheet and get 2 if there's chocolate that sticks.

With the cheaper stuff (wilson in particular), it's thinner, and only good for one batch. Since Reynolds is less than twice the cost of the other brands, it's not worth getting the cheaper stuff.

1) depends on where the fan is exhausting from and to.

2) don't bake a lot of cookies, but we do use parchment to line the pan in the toaster oven (even though the box says not to) and we do re-use it several times until it starts to get brown and brittle. occasionally have let it go too far and catch fire, but that's when you use it for several times with the top element on. so, definitely okay for at least two batches of cookies.

made my post before I read this one, but should probably specify that we also use the Reynold's parchment. haven't used the cheap stuff, but Reynold's is certainly good for several uses.
