They usually have a slightly different tactile response than a normal keyboard, which in my view feels better. Anything under $200 is still rubber dome or scissor, but they try to make the gaming keyboards a bit better.
Antighosting means you can hold down multiple keys simultaneously without them being confused, although this doesn't matter too much without custom USB drivers since the default HID allows only 6 keys held at any one time. This is useful while gaming, because you can undertake multiple commands at the same time.
They might have macro commands, which are very useful, because with a single press a pre-recorded sequence of strokes can be sent.
And sometimes they look cooler than standard keyboards. I suspect this is the primary motivating factor in purchase.

Man, I miss the old Mighty Archaic Computer keyboards. While wireless Bluetooth is teh hotness, I liked having aux USB ports and real keys. There are many times when making something smaller is beneficial. Keyboards should not be one of them.
Unfortunately, the old Mighty Archaic Computer keyboards had a tendency to get rather dirty...

This.
Maybe that special sterile anti-static goo stuff can get crumbs out (or compressed air + a toothpick), but at prices like this...
