Ground pork, green beans, in a soy based ginger-garlic sauce. Modification of a recipe from someone's childhood, ants on a rope (noodle).
Ants on a branch
4 T peanut oil
1 1/4 pound green beans, rinsed, cleaned, trimmed, cut to 3/4-1 1/4 inch section
1 T minced fresh ginger
1 T minced garlic
1/2 t flakes crushed red pepper
1/2 pound ground pork
1/3 c chicken stock
2 T soy sauce
1 T rice vinegar
1 1/2 t corn starch
1/4 c thin sliced green onion
Heat the peanut oil in a large pan. Add ginger, garlic and pepper. Cook, stirring often, for 3 minutes. Add pork, brown fully, stirring to break into small pieces. Add green beans, cook for 5-7 minutes, until beans begin to soften, stirring occasionally. Combine stock, soy sauce, vinegar, and corn starch. Whisk to mix. Add to pan, stir, cook until thickened slightly. Serve over rice, top with sliced green onions.
