Pretty easy recipe... blend for 1 minute a silken tofu package, 1 cup of chocolate chips, 1 tsp of vanilla extract, 1/8 tsp almond extract. Scrape sides with spatula, blend another minute or until well combined.

Pour into large bowl, fold in half cup of fat free (I used 1%) Greek yogurt, refrigerate until serving.

It's not exactly like regular mousse, but pretty good in itself. I've had a better tofu version that tasted no different than normal mousse, but I can't remember that recipe, made it at a friend's some years back. I think it involved a bit more work than this one though, this one is pretty quick!

Yes, my great grandmother's. My son even borrows it sometimes when he's making one. He swears his iron one doesn't taste the same when it's done.

I think the next time he borrows it I'm going to tell him just to give me his pan and he can keep hers. I don't make it that often and it's one of his favorites.

My problem is my original recipe fits exactly in my grandmother's skillet. But a few years back my d-i-l told me HER grandmother said to add crushed pineapple to the batter and it comes out really moist. I tried it and it does. BUT need a bigger skillet and the new ones just aren't the same.

I second pooflady.

For me, it was a nice thick slice of homemade sourdough bread, toasted nice and dark, with a bit of low-fat cream cheese on. Delectable.

I made cherry muffins and ate...three. They were small! It was a new recipe using dried cherries and made from scratch.
