Are you mashing grain or just boiling wort?
If you're boiling, you don't need a thermometer at all. Just maintain a steady rolling boil.
If you are mashing your own grain, and not doing an extract recipe, or mashing adjunct grains for a partial extract recipe, this should work.
But, if you're mashing at all, you would want to keep an eye on temps. A direct reading thermometer, or one that actually shows temps on the remote would be better.
Also, I'd be worried about getting the wires wet. Just my weirdnesses.
