If ever anything claims a description of "bayou," "Cajun," or "Louisiana," you should always check the address before buying. Anything not produced in Louisiana (Tabasco, Tony Chachere's, Zatarain's, etc) doesn't hold up.

Kosher salt has larger crystals than table salt, so the same amount of kosher salt is going to taste less salty than the equivalent amount of table salt.

Yep. Salt is salt. Coarse salt is used for the meat koshering process and so coarse salt has become known as kosher salt. That being said, salt can be processed and handled in such a way that renders it unkosher and so still requires a certification.

Not being Jewish, of course, maybe I'm just missing something. I do know that Christ said something about "salt losing its saltiness", but He was speaking metaphorically (even my Fundie brethren agree on that one). Salt's salt's salt, right?

Chili Powder
Garlic Powder

This is FROM Tony Cachere's book...but our adaptation. We do equal amount of ingredients (i.e.less salt). We put in a big shaker --label it "cajun" and use on everything.

Good luck... (Make some up & invite me over for dinner ha ha ).

The Bayou Dirt uses Kosher salt, but is not koshered. You will find no better seasonings on the market. The website just came up and it is having a woot off sale.
