To make root beer or birch beer you simply mix the flavoring stuff into a bunch of water and some sugar and bottle it. It comes out pretty good. There's no actual brewing with those kinds of things.
I used to make beer for a number of years. Over 300 gallons in batches of 5 gallons at a time. It was GREAT. Mostly I made brown ales but my oatmeal stouts were excellent. Ummmmmmmm beer.........

Yes. You bottle carbonate with this kit, meaning you add a little sugar to the bottle as you are bottling, and in a week or so the remaining yeast in the beer converts that sugar to alcohol and carbon dioxide, carbonating the beer in the bottle.
Bottle carbonated beer tastes a little different than force-carbonated beer. It feels like bottle-carbonated beer has smaller bubbles.
