It's my understanding it's used as a thickening agent/milk replacement.

Mixes as gifts just piss me off. You were too lazy to actually make me muffins? And now I gotta go to the store and get sour cream and butter? Rude.

Besides making the baked product moister, it also adds to the effectiveness of the leavening agent, in this case the baking powder.

Why would you order a baking mix when there's (probably) a grocery store pretty nearby.

If it's a gift, making your own mix package is nicer too.

Eh, I guess I prefer dryer cakes. Gives me an excuse to down a quart of milk at the same time.

Assuming that's supposed to be "reduced iron" -- that's a nice way of saying "rust". It's how many foods get their added iron.

well....since my cooking skills are minimal, and ThunderThighs is too far away, I was hoping all I had to do was add some water or milk to make these.

Instructions say something about mixing sour cream and something else. Bummer. I'll have to go and buy some before I can make these. I could have just picked up a bag of muffins while I was at the store buying sour cream. ;)
