3 large eggs + 3 large egg yolks
1/4c + 2T sugar
4T butter cut into small pieces
Bring juice to boil over medium high. Reduce heat, simmer till reduced by half (5 minutes). Cool
Whisk eggs, yolks, sugar, juice, zest, pinch of salt in double boiler. Whisk constantly and cook for 6 minutes. Remove from heat, whisk in butter slowly
Pour through sieve into another bowl that's sitting in a bigger bowl of ice water. Stir until cool. Cover with plastic wrap and refrigerate overnight
