I have certain foods that I'll always order when I go to a new restaurant, since they're always good yet the recipes are always different. Kung Pao, meatloaf, spaghetti and meatballs...

For Mexican restaurants, I will ALWAYS order the enchiladas the first time out.

I usually get queso as an appetizer, then enchiladas for the entree. Generally I get 1 chicken and 1 cheese enchilada. Sometimes I get fajitas witch are great too

A Pancho Combination, Guacamole, taco, chile con queso, and your choice of enchilada. I also love fajita (chicken or beef) enchiladas with chile gravy, rice and beans. Classic Tex-Mex.

Here's the protocol:

First test -- Rice and beans. If they can't get the most basic items right, what's the point?

Second test -- tamales. Luv em! If they do it right, they move up a notch.

Final test -- Carnitas! Mmmmmmmmm. If they pass the other tests, and have good carnitas too, that, Sir, is a fine establishment!

Depends. Tex Mex = Fajitas. In an authentic Mexican restaurant tho, fajitas tend to be comprised of flattened meat that's fried, and tastes like greasy shoe leather so I just go for a burrito.

Either way, I never actually eat it, since I always fill up on crack before my meal arrives. (Chips and salsa)

My standard order is 2 tacos, 2 enchiladas, and either a burrito or chimichanga. No rice a side of beans and a side of flour tortillas, a side or guacamole and a side of sour cream. My favorite restaurant also bings me a glass and a pitcher of diet coke (wouldn't want to get fat) that they keep full.

I know a lot of people swear by ceviche but I have never had any I liked. Its not the raw fish (although being a biologist I have a rational fear of liver flukes present in a lot of raw fish) its just generally to mild and the spice is better added during preparation rather than an after thought.
