Ingredients
6 large egg yolks
1/2 cup sugar
1 cup heavy cream
2 cups milk
1/2 tsp nutmeg
Pinch of salt
1/4 tsp vanilla extract


Instructions
1.Whisk the egg yolks and sugar together in a medium bowl until light and creamy.
2.In a saucepan over medium-high heat, combine the cream, milk, nutmeg and salt. Stir often until mixture reaches a bare simmer. Add a big spoonful of the hot milk to the egg mixture, whisking vigorously. Repeat, adding a big spoonful at a time, to temper the eggs. Once all of the hot milk has been added to the eggs, pour the mixture back into the saucepan on the stove. Whisk constantly, until mixture reaches 160 degrees F on a thermometer.
3.Remove from heat and stir in the vanilla.
4.Pour the eggnog into a pitcher or other container and cover with plastic wrap. Refrigerate until chilled.

Eggnog fudge ... good stuff!

Ingredients
2 cups granulated sugar
1/2 cup butter
3/4 cup dairy eggnog
10.5 ounces white chocolate bars, chopped into small pieces
1/2 tsp freshly grated nutmeg, plus a little more for the top of the fudge
One 7 ounce jar marshmallow creme
1 tsp rum extract

Directions
1. Line an 8 or 9-inch square pan with foil and let it hang over the sides. Butter the foil.
2. In a heavy, 3-quart saucepan combine sugar, butter and eggnog. Bring to a rolling boil, stirring constantly. Continue boiling 8 to 10 minutes over medium heat or until a candy thermometer reaches 234°F, stirring constantly to prevent scorching. Remove from heat.
3. Using a wooden spoon, work quickly to stir in chopped white chocolate and nutmeg until chocolate is melted and smooth. Stir in marshmallow creme and rum extract. Beat until well blended and then pour into prepared pan. Sprinkle a little freshly ground nutmeg on top. Let stand at room temperature until cooled. Refrigerate if you’d like to speed up the process.
4. When completely cool, cut into squares. Store in a covered container.

Separate the eggs.

Put the yolks in your big bowl, the whites in the electric mixer bowl*.

* Make sure the bowl is clean and dry, with no oil residue - grease of any sort can interfere with proper egg white whipping.

Mix the yolks vigorously with the wire whisk for about a minute - they will turn much lighter yellow.
Whisk in 3/4 cup sugar and 1/2 teaspoon vanilla, whisking steadily. Grate* in a bit of nutmeg** (gently - you can always add more later, and fresh nutmeg can be powerful), then add 3 cups cream and 2 cups milk (and the booze, if you're using it) and whisk a bit more. Everything should be thoroughly incorporated.

Beat the egg whites until they form soft peaks - this is exactly why we have robots in the kitchen. (It will take ~3-5 minutes, even longer if you're crazy enough to try whisking it by hand.)

Add 6T sugar, one tablespoon at a time, as the mixer runs. Continue beating until the mixture forms stiff peaks, but still looks moist (another 2-4 minutes). See the last picture to see how stiff the mixture is as I scoop it out of the mixing bowl.

Gently fold the egg whites into the yolk/cream mixture with a spatula.

Scrape the egg whites out of the bowl with your rubber spatula, and use a gentle sweeping motion to incorporate the whites to save all the air you just beat into them. (If you whisk them in all of that nice fluffiness will be lost.) You should still have some small blobs of unincorporated eggwhite (see last picture), and if the mixture is allowed to sit it will separate.

Ah, traditions!

6 eggs, separated
1 cup sugar
A pinch of kosher salt
3 cups whole milk
2 cups heavy cream
2 cups dark rum
Whole nutmeg and cinnamon stick (for serving)

Whisk egg yolks, sugar, and salt in a large punch bowl just until sugar is dissolved, then whisk in milk, cream, and rum. Cover and chill egg nog base at least 2 hours.
Just before serving, using an electric mixer, beat egg whites in a medium bowl until stiff peaks form. Gently fold into egg nog base. Finely grate nutmeg and cinnamon over as desired.

My eggnog brings all the boys to the yard! (actually just Alton Brown because I stole his recipe)

Ingredients
4 egg yolks
1/3 cup sugar, plus 1 tablespoon
1 pint whole milk

3 ounces bourbon
1 teaspoon freshly grated nutmeg

Directions
In the bowl of a stand mixer, beat the egg yolks until they lighten in color. Gradually add the 1/3 cup sugar and continue to beat until it is completely dissolved. Add the milk, cream, bourbon and nutmeg and stir to combine.

Place the egg whites in the bowl of a stand mixer and beat to soft peaks. With the mixer still running gradually add the 1 tablespoon of sugar and beat until stiff peaks form.

Whisk the egg whites into the mixture. Chill and serve.

Cook's Note: For cooked eggnog, follow procedure below.

In the bowl of a stand mixer, beat the egg yolks until they lighten in color. Gradually add the 1/3 cup sugar and continue to beat until it is completely dissolved. Set aside.

In a medium saucepan, over high heat, combine the milk, heavy cream and nutmeg and bring just to a boil, stirring occasionally. Remove from the heat and gradually temper the hot mixture into the egg and sugar mixture. Then return everything to the pot and cook until the mixture reaches 160 degrees F. Remove from the heat, stir in the bourbon, pour into a medium mixing bowl, and set in the refrigerator to chill.

In a medium mixing bowl, beat the egg whites to soft peaks. With the mixer running gradually add the 1 tablespoon of sugar and beat until stiff peaks form. Whisk the egg whites into the chilled mixture.

Eggless nog:

3 cups almond milk
4 frozen, peeled ripe bananas
2 dates, pitted and soaked for 1 hour
1/2 teaspoon pure vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
small pinch of ground cloves
pinch of sea salt

Put all ingredients in blender, blend on high until banana and dates are fully blended with no chunks.

Pour into glasses, sprinkle each with desired amount and combination of cinnamon and/or nutmeg and serve.

Makes ~8 servings.

Or, if you're lazy like me: buy soy nog or almond milk nog.

I like to add amaretto liquor to mine to change things up, but if you want a classic nog flavor, add a few ounces of spiced rum, butter rum, or brandy before blending.

for something a little different, try Puerto Rican Eggnog (aka Coquito):

full recipe

Ingredients:
6 Large egg yolks
3 c White rum; (a touch less if you use 151 proof)
3 12-oz cans evaporated milk
8 3-inch sticks cinnamon
2 cans Coconut milk
2 c Water
3 14-oz cans sweetened Condensed milk


Preparation:
- In a 2 quart saucepan, heat water and cinnamon sticks to boiling over high heat.
- Reduce heat to medium and cook until liquid is reduced to one cup.
- Remove cinnamon sticks and set liquid aside to cool to room temperature.
- In a 3 quart saucepan with a wire whisk, beat egg yolks and evaporated milk until well-mixed.
- Cook over low heat, stirring constantly until mixture thickens and coats a spoon -- about 10 minutes (DO NOT BOIL).
- Set aside to cool slightly. When cinnamon flavored liquid has cooled, stir in coconut milk until well mixed.
- In serving bowl, combine coconut mixture, yolk mixture, sweetened condensed milk, and rum. Chill well and serve.

Recipe makes 16 servings.

SPICED WINE

1 (750ml.) bottle medium-bodied red wine (such as Pinot Noir or Beaujolais)
1/2 cup sugar
10 whole cloves
8 cinnamon sticks
4 bay leaves
1 medium size orange, cut into 8 wedges
garnishes: cinnamon sticks, orange wedges

Bring 1st 6 ingredients to a boil in a med. saucepan over high heat. Remove from heat and let stand 10 minutes. Pour through a fine mesh strainer; discard solids. Serve hot or warm.
Makes 3 1/4 cups. Takes 20 min.
