I think it's more or less the same as everyone else's Thanksgiving. At least as far as I can tell from my Canadian friends.

Same as here, turkey, ham, 'taters pumpkin pie.
Obviously not a celibration of the pilgrim's sitdown with the Indians, but more of a giving thanks for a good harvest etc.
