Pamela's Products Ultimate Baking/Pancake Mix

I've only used this to make pancakes, but that was my intended purpose, but it works really well! I like this pancake mix because I have dietary restrictions for health reasons, and this has a short list of ingredients and none are problematic for me. I love that it doesn't have any added sugars or artificial sweeteners, and you can add your own if you want; I've been looking for something like this for a while. I also love that protein powder mixes well and produces fluffy pancakes that taste good with no additional effort (aside from the sweetener I use, erythritol, which I add with or without the protein powder). A lot of protein pancake mixes taste awful, and I've had a hard time finding pancake mixes that mix well with whey protein powder (I use unflavored Isopure whey protein isolate). There's no difference in the way the pancakes cook or taste when I add the protein powder, which is a first! Overall, good stuff. I can't speak to the flavor because I add a sweetener, and I've never tasted it without it. Though I assume most people would add sweetener of some kind when baking with this.
